Sample is heat shocked at 80C for ten minutes and plated on selective media (Dextrose Tryptone Agar (DTA)) and incubated anaerobically (without oxygen) at 35C for 48 hours.
This is a method to enumerate anaerobic mesophilic spore-forming organisms that contaminate food ingredients and may cause spoilage in thermally-processed low-acid foods (pH>4.6).
