Method Description:
Ascorbic acid is extracted into a methanol/metaphosphoric acid solution. The ascorbic acid is converted to dehydroascorbic acid, which is then reacted with ortho-phenylenediamine to form a fluorophor whose intensity is proportional to vitamin C concentration. A blank is simultaneously run on each sample to determine the level of background fluorescence. The total vitamin C content can then be calculated by comparing the net fluorescence to a standard curve.
