The sample is solvent extracted and the extract is added to a solution of enzyme-conjugated toxin. The mixture is then transferred to an antibody-coated plastic well where the free toxin and the enzyme-conjugated toxin compete for antibody sites. After rinsing, a color developer and stop solution are added. The color of the well is observed for the presence/quantity of ochratoxins in the sample.
This test measures Ochratoxin A, which is produced by some Aspergillus species and Penicillium species.
Concentrated food additives, colors, and flavors may cause interferences on ELISA test methods.
